  1. Preheat oven to 350 and grease a loaf pan.
  2. Mix pumpkin, maple syrup, and eggs in a large bowl.
  3. Add dry ingredients: oat flour, cacao powder, baking soda, baking powder, spices, and a pinch of salt. Stir until all combined but do not overmix. Fold in chocolate chips. Mixture will be thick.
  4. Pour into greased loaf pan, topping with more chocolate chips. Bake for 40 minutes, or until toothpick comes out clean. You may an additional 10 minutes depending on your oven.
Recipe Notes
  • To make the bread Paleo or grain-free, you can sub Almond Flour or Cassava Flour for the Oat flour.
  • To make the bread Vegan, use flax eggs or a vegan egg replacer.
