Banana Granola (Oil Free)

The easiest granola you will ever make, with the delicious flavors of Banana Bread! This recipe is super simple and not overly sweet; feel free to make adaptations to suit your needs.

Ingredients
  

  • 1 Ripe Banana
  • 1.5 Cups Rolled Oats
  • 0.5 Cups Walnuts
  • 1 teaspoon Cinnamon
  • ½ teaspoon Salt
  • Optional: 2 tablespoon Hemp Hearts
  • Optional: 1 teaspoon Vanilla Extract

Instructions
 

  • Preheat oven to 350 degrees F and line a baking tray with parchment paper.
  • In a medium bowl, mash the ripe banana.
  • Add the rest of the ingredients and mix everything to combine. Make sure all the oats are coated with the banana mixture.
  • Pour granola onto the baking sheet and use a silicone spatula to push everything down into a thin layer.
  • Bake for 25 - 30 minutes, turning halfway. Keep an eye on the granola to make sure it doesn't burn toward the end!
  • Once done, let cool completely - it will firm up and become crunchy while cooling.
  • Enjoy! Store in an airtight container and keep in the fridge for up to 1 week.

Notes

Sub the Walnuts for any other nut - Pecans or Almond slices would be delicious. Or use pumpkin seeds for a nut free version.
If you want a sweeter granola, add ¼ cup of Maple Syrup. 
To make this Granola taste like Banana Bread, add it to Vanilla yogurt and chocolate chips! YUM!
