Healthy Chocolate Pumpkin Bread
Fall is officially here, which means its time for all the Pumpkin flavor things! This healthy chocolate pumpkin bread is sure to become a staple in your fall baking options. Its so versatile, healthy, and soooo easy to make its even a little ridiculous. Eat it for dessert, snack, breakfast, breakfast dessert, whatever!
The ingredients are simple and you probably have most of them in your pantry right now even.
Canned Pumpkin. Not to be confused with Pumpkin Pie filling. Canned pumpkin is just cooked and pureed pumpkin and should have one ingredient. You *could* cook and puree the pumpkin yourself too, but we like to keep things simple over here!
Eggs. These keep the bread together. For a vegan option, sub in Flax eggs!
Pure Vanilla Extract. This enhances the chocolate-y flavor of the bread. I would not recommend skipping it!
Oat Flour. Oat Flour gives the bread a great chewy and almost nutty texture. If you don’t have any oat flour on hand, simply blend up some Rolled Oats in a food processor (I love this one) or blender! For a Paleo or Grain free bread, you could sub in Almond Flour. I would not recommend using Coconut Flour in this.
Cinnamon. Duh! Bring out that delicious fall pumpkin flavor!!!
Cocoa Powder. This makes the bread base chocolate. I love using this Dark Chocolate Cocoa Powder for an even richer chocolate taste, but you could use any.
Chocolate Chips. More texture, more chocolate, more pretty. Win win win!!!
This healthy chocolate pumpkin bread is made gluten free and dairy free. There are variations to make the bread paleo, grain free, and/or vegan as well.
- To make the bread Paleo or grain-free, you can sub Almond Flour or Cassava Flour for the Oat flour.
- To make the bread Vegan, use flax eggs or a vegan egg replacer.
