This healthy blueberry peach cobbler is the perfect healthy summer dessert. The cobbler topping is free of any added sugar, vegan, and can easily be made gluten free or grain free! The Blueberry + Peach combo is a summer classic. The sweetness of the fresh peaches plus the juiciness of the blueberries creates the perfect flavor/texture for a summer crumble. Or pie. Or crisp. But you could easily only use one of the fruits, or sub a different berry, or use nectarines, or plums...

Substitutions & Customizations
The cobbler topping is also just as customizable. It mostly consists of spelt flour, oats, and pecans, but you can adjust this for any of your dietary needs or preferences.
For a nut free version, try subbing out the pecans for some sunflower seeds.
For a Paleo version, try subbing the spelt flour for almond flour, and oats for coconut flakes.
Or, for a gluten free version, try subbing the spelt flour for oat flour or almond flour.

- 3 Cups Blueberries
- 2 Peaches
- 1 tsp Cinnamon
- 1 - 2 Tbsp Fresh Lemon Juice optional
- ¾ Cup Spelt Flour Can Sub Oat Flour or Almond Flour
- ¼ Cup Chopped Pecans Sub any nut
- ½ Cup Rolled Oats
- ½ tsp Baking powder
- 1 tsp Cinnamon
- ½ tsp Salt
- ¼ Cup Coconut Oil Solid, room temp
- 1 - 2 Tbsp almond milk

- Preheat oven to 350 and grease a cast iron skillet or round baking dish.
- Cut up peaches into thin slices. Toss peach slices and blueberries with cinnamon and a fresh squeeze of lemon.
- Mix the spelt flour, pecans, oats, cinnamon and salt. Add the coconut oil and combine using a fork or your hands. Lastly, add 1 tbsp of almond milk (or regular milk) to achieve a thick consitency.
- Put the fruit into the skillet/baking dish. Roll the cobbler mixture into ovals and place over top the fruit. Bake for 30 - 35 minutes, making sure the top doesn't burn. Serve immediately with a cold scoop of vanilla ice cream!
