Pumpkin French Toast & A Holiday Gift Guide

This Pumpkin French Toast is great for a variety of reasons, including: you can bake it in an oven, it’s made with REAL pumpkin (like these vegan muffins), it’s made with SOURDOUGH bread, and it’s just so moist and delicious and tastes so yummy.

You don’t *have* to make this recipe with Sourdough bread, but I really highly recommend it. The sourness of the bread and the sweetness of the pumpkin create a really wonderful flavor. Plus it’s the (second) best bread of all time anyways, sour-duhhh.


Back to “you can bake it in an oven” — the worst part about making French Toast (or even fluffy pancakes, for that matter), in my most humble opinion, is only being able to cook a few at a time —  the first ones get cold and the last ones get burnt because the pan is so hot! Can’t win!!! Or is it just me?

Using a broiler tray to bake these in an oven was pretty genius, if I do say so ma’self. You can cook them all at the same time (well, as much as your broiler pan can handle!), and ensure that no toast is burnt! Not sure how well this method would work with pancakes though. But I digress…

Pumpkin French Toast
This fall-inspired Pumpkin French Toast is made with real pumpkin, no added sugar, and is completely addictive. Bonus: It can be made in an oven to ensure even cooking, no burning, and cut down on time!

Wet Ingredeints
  1. Whisk all wet ingredients together in a bowl.
  2. Slice your bread. Dip each slice in mixture to coat. I suggest using tongs for this part.
  3. If making on stovetop: Melt some coconut oil (or any neutral oil) in a pan on Medium/High. Cook bread until outside is crispy but not burnt, about 2 - 3 minutes per side. Make sure pan doesn't get too hot as you make the batches!
  4. If making in the oven: Preheat oven to 300. Spray a broiling tray generously with coconut oil. Place slices of bread and bake for ~8 - 9 minutes, watching closely at the end to ensure they do not burn.
