This Gluten Free Apple & Honey Cake is the perfect dessert for the upcoming Jewish New Year. It is naturally gluten free, dairy free and sweetened only with honey - perfect for a happy and healthy new year!
Apple Topping
Do not be intimidated by the beautiful Apple topping on this simple cake! It looks intricate, but it really is super simple to make.
Simply cut an apple into thin slices (I love and always recommend this knife, as the best "starter" knife).
Then, microwave them to soften them and cook them a little bit. This helps them stay soft when you bake the cake.
Finally, when your cake is ready, lay them around the edges in circles, working your way from the outside in. It doesn't need to be perfect - when it bakes, it will come out beautifully! I promise.
Apple Honey Cake Ingredients
This simple Honey Cake is made from all wholesome ingredients, which you probably have in your pantry! It requires no traditional flour or sugar.
Oat Flour and Almond Flour - give the base of this cake a moist, nutty, delicious flavor and texture.
Honey - Honey is key in a Honey Cake Recipe, of course! Honey replaces any refined sugar or other sweetener in this recipe. Don't worry about using Raw honey (which tends to be more expensive). Once you bake the cake, the special properties of raw honey are no longer.
Egg - Egg helps to bind this cake.
Apple - Apples lend moisture, sweetness, and a beautifully pleasing top. You can use your favorite Apple Variety here - I love Granny Smith, Gala, Pink Lady, or Honeycrisp, if they are still in season!

There are various interpretations and reasons given for why eating Apples and Honey is customary, but these are the ones I choose to focus on.
Many people believe the honey is symbolic of hope for a sweet year ahead.
Some people think the apples are symbolic of Eden. Rosh Hashana celebrates creation and new beginnings, so its an appropriate fruit.
Whether you celebrate the Jewish New Year or not, this cake is truly a delicious treat for all to enjoy!

- ½ C Honey
- 1 Large Egg
- ½ tablespoon Oil
- 1 C Oat Flour
- ½ C Almond Meal (Or Almond Flour)
- 2 teaspoon Cinnamon
- 1 teaspoon Apple Pie Spice Sub: Pumpkin Pie Spice
- 1.5 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 Medium Apple Your favorite kind!

- Prepare the apple topping: slice ½ - ¾ of the apple into very thin half-moon slices. Put the slices in a bowl and cover with plastic wrap, then microwave for one minute. Remove from microwave, remove plastic wrap, and let sit while you prep the rest. Cut little 1cm chunks with the remaining apple, to put directly into the cake batter.
- In the meantime, preheat oven to 350 and grease a round 8" cake pan.
- In a large bowl, whisk together the wet ingredients (applesauce, honey, egg, oil). Slowly add in the dry ingredients, and stir until everything is just combined. Lastly, fold in any remaining apple chunks, if using.
- Pour the batter into your cake pan, and arrange the microwaved apple slices on top. Start with an outer circle, then an inner one.
- Bake your cake for 30 minutes, and allow it to cool completely before removing from the pan. Serve immediately, or refrigerate and enjoy within 3 days!

Hi there, I have never used Erythritol so I don't know how it would taste exactly. If its similar consistency and sweetness to honey, you could certainly try it. Let me know!

You can try regular All Purpose Flour, though I haven't tested it! Usually it would work in a recipe like this.
