    Instant Pot Teriyaki Chicken

    Its getting cold outside, so its the perfect time for trying out some warm and comforting meals. This Instant Pot Teriyaki Chicken is an amazing healthy, delicious, and easy meal. Throw some chicken breasts and simple sauce ingredients into your Instant Pot while you cook some rice, and you'll have dinner on the table in under 30 minutes! Or your Meal Prep for the next few days done.

    The Ingredients

    Chicken Breast. For a lean and high protein option, this recipe calls for chicken breast. If you prefer dark meat, you could easily sub in boneless and skinless chicken thighs.

    Soy Sauce. For that salty, umami flavor. See the next section for a Gluten Free/Whole 30 substitution.

    Rice Wine Vinegar. Less acidic than regular vinegar, with a slightly sweet mild flavor.

    Honey. Honey adds the sweetness, since Teriyaki is a sweet sauce. Teriyaki sauce usually contains brown sugar, but this version is refined sugar free.

    Garlic. Flavor benefits and health benefits galore!!! Did you know garlic has tons of health benefits for your heart and blood?

    Ginger. Just like garlic, Ginger adds a boost of flavor as well as health benefits. Slightly spicy and adds some heat to this dish.

    White pepper. White pepper is more mild than black pepper and is commonly used in Asian cooking. If you don't have any, you could always sub in black pepper!

    Whole 30 Compliant Substitutions

    While this Instant Pot Chicken Teriyaki is gluten free, grain free, dairy free, and refined sugar free, there are still some ingredients that strict adherents of Whole 30 may not want to use.

    • Instead of Soy Sauce, you can use Coconut Aminos
    • In place of Honey, you can use Date Syrup (Whole30 guidelines specify you can add dates for a hint of sweetness to a sauce, though you shouldn't be snacking on them), or simply leave it out for a less sweet sauce
    • Instead of rice, try some sweet potatoes or cauliflower rice, or leave it out!

    For a vegetarian or vegan option, try replacing the chicken with some Tofu or Tempeh! The sauce ingredients will remain the same.

    For the Terriyaki Chicken
    • 2 Chicken Breasts 1 - 1.5 lbs
    • ⅓ Cup Soy Sauce/Tamari/Coconut Aminos
    • 3 tablespoon Water
    • 2 tablespoon Rice Wine Vinegar
    • 1 - 2 tablespoon Honey
    • 1 teaspoon dried garlic OR 1 garlic clove minced
    • 1 teaspoon dried ginger OR ~1" piece of ginger minced
    • ¼ teaspoon White pepper to taste (or regular pepper)
    • Chilli flakes or paste Optional
    For the Blasted Broccoli
    • 2 - 3 heads of brocolli
    • 2 - 3 tablespoon garlic Minced
    • 1 - 2 tablespoon Avocoado oil or any high heat oil
    • Salt and pepper to taste
    • 2 - 3 heads of brocolli
    • 2 - 3 Tbsp minced garlic
    • 1 - 2 Tbsp Avocoado oil or any high heat oil
    • Salt and pepper to taste

    Instructions
    1. Set oven to 425 degrees. (For the broccoli).
    2. Put your Instant Pot on Saute mode. Pour all the ingredients for the chicken Teriyaki Sauce into your Instant Pot, except the chicken. Heat up and stir for 2 - 4 minutes, directly in the Instant Pot.
    3. Turn off saute, add the whole chicken breasts to the IP, and close it. Set the IP to manual for 12 minutes, making sure the valve is on "sealing". Once done, do a quick release and shred the chicken on a plate or cutting board. Toss the shredded chicken back to the IP to coat in the remaining sauce.
    4. While your chicken is cooking, cut your broccoli into florets and coat broccoli in oil, garlic, salt and pepper. Roast in the oven for ~15 - 20 minutes while chicken cooks in the Instant Pot, watching so it doesn't burn. Broil for 1 - 2 minutes at the end for super crispy broccoli.
    5. Serve chicken over rice or whatever you'd like, with broccoli on the side. Enjoy!
