Recipe Inspiration
Full disclosure: These are really just my Paleo Salted Almond Butter Cookies, with peanut butter instead of almond butter and a few other minor tweaks. They have quite a different taste and texture, and everyone seems to love the PB version, so I thought these deserved a page of their own. Feel free to make them with Almond Butter if you prefer - I love this brand.

Equipment needed for the Easiest Peanut Butter Cookie Recipe Ever
Besides the incredible taste, texture, and secretly healthy-ness of these cookies, the other best part is how easy they are to make! Like most recipes on my site, these only require ONE BOWL.
What will make your baking and clean-up experience even better is a silicone spatula. If there is only ONE kitchen tool/appliance/cookware item I could get you to buy, it would be a Silicone Spatula, if you don't already have one. Here is a link to a basic set, and here is a link to a bit of a "nicer" one with a wooden handle, though still very affordable.
They seriously make mixing so much easier, and they scrape the bowl SO WELL, you hardly have to clean it.
I don't know how I went so long without one. You can get a 4-pack on Amazon for less than 10 bucks (linked here - this is an affiliate link). Seriously though, try it out. Thank me later.
Aside from a Silicone Spatula, which is HIGHLY recommended, but not absolutely necessary, you will need a Mixing Bowl, and a baking sheet. And something to line your baking sheet - either Parchment Paper or a reusable Silpat mat (I love this one).

The Best Peanut Butter Cookies Ever
Ingredients
- 1 Cup creamy peanut butter (I recommend this brand, this brand, or this brand)
- ½ Cup Coconut Sugar
- ¼ Cup Almond Milk
- 2 - 3 tablespoon Coconut flour
- 1 teaspoon baking soda
- 1 teaspoon salt If your Peanut Butter is unsalted
Instructions
- Preheat oven to 375 and line a baking sheet with Silpat mat or parchment paper. Mix peanut butter, coconut sugar, and almond milk with a silicone spatula. Then, add in 2T coconut flour, baking soda, and a dash of salt and mix until all combined. Mixture will be quite sticky. If seems TOO sticky, add the 3rd tablespoon of coconut flour.
- Use a spoon and the silicone spatula to scoop into rounds on the baking sheet, lightly shape with your fingers. Top with a generous dash of sea salt flakes if desired, and bake for 12 – 14 minutes. Remove, and after ~2 minutes out of the oven, while the cookies are still warm, gently press down with your hands, or the bottom of a glass, to flatten the cookies to desired shape.
- Top with even more sea salt if desired and a PB drizzle! Now, LET COOL COMPLETELY for cookies to firm up (That’s the hardest step!) Don’t forget to tag me and use #thegranoladiaries in your posts!

I could've ate all of these by myself!!! Sooo good! I'm just so impressed that these are gluten free, dairy free, AND egg free!!! That is what my husband is and it's tough man. These are super easy and quick (I'm not a cook at all). She was so right in her post saying "waiting to cool is the hardest part" so true lol! The cookies are crumbly if you don't wait but IF you wait to cool then they're exactly how a cookie should be! I decided to smoosh my cookies down with a fork before throwing them in the oven and that worked out well for me. Thank you for this recipe!

These are very tasty but for some reason my cookies disintegrated into crumbs just by touching them. Don't know what I did wrong or if they are meant to have that texture.

I'm so sorry you had this experience! Patience is super important in allowing these cookies to cool completely so they can firm up before eating them. Sometimes popping them in the fridge or freezer can hep too.

These were really good! I used swerve brown sugar instead of coconut sugar and baked at 350 for 10 mins because I was worried about it crumbling- it was slightly undercooked, soft and delicious! Thank you!

Was searching for a (mostly) AIP peanut butter cookie as I’ve reintroduced peanut butter but not eggs or butter. Came across this gem and substituted the almond milk for coconut and they are perfect! Added 2 tablespoons of Enjoy Life chocolate chips, too which was icing on the cake. I did flatten them down a bit before baking with a fork and lowered the temp as another reviewer suggested and they weren’t crumbly at all after 12 minutes at 350. Thank you so much
