Paleo Tahini Banana Bread - that's a lot to take in. Let's break it down...
Paleo: ya know, nothing processed, all real food, etc...

Banana Bread: basically the best treat, but I didn't really need to tell you that

The 2 main ingredients of this bread are in the title: Tahini & Banana. Add some almond flour to give it a "bready" texture, some eggs to bind it all together, and a touch of honey to sweeten it ever-so-slightly, and that's it! You could also leave the honey out and make it less sweet. OR, you could add in chocolate chips and make it more sweet. Go crazy.

Chocolate Banana Bread
I loved topping my Tahini Banana Bread with even more Tahini (!!!) and some yogurt and granola. Also, it would be delicious with a drizzle of honey. And on its own!

- 1.5 Cups Almond Flour
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- 3 Overripe Bananas (+1 to top, if desired)
- 3 Eggs, room temperature
- ½ Cup Tahini
- 1 teaspoon Vanilla
- ¼ Cup Honey Optional

- Preheat oven to 350 and grease a 9x5" loaf pin, or line with parchment paper.
- Mash bananas in a bowl. Add the rest of the wet ingredients and mix well. Add the almond flour and baking powder/soda, and stir until just combined. Optional: add some chocolate chips or walnuts.
- Pour into loaf pan and bake for 40 - 47 minutes, or until toothpick inserted comes out clean.
Note: This bread is not very sweet, even with the ¼ C of Honey. If you want to make a sweeter treat, you can add more honey, add some coconut sugar, or add in some chocolate chips!
