This vegan and gluten-free blueberry crisp recipe is the perfect dessert; its an easy recipe with minimal prep and bake time, using simple ingredients and seasonal fruit. It's refreshing, crispy, juicy, and just the perfect amount of sweetness.
The recipe can also very easily be adapted for a strawberry or raspberry crisp. Fruit crisps are the best! But in my opinion, juicy blueberries really are the best option - especially if you can find those small, wild ones.

How to Make The Best Gluten Free Blueberry Crisp
Did I mention yet how easy it is to make this recipe?!
For the blueberry filling, simply pour your blueberries into a baking dish, and mix everything around with some vanilla extract and some lemon zest.
To make the delicious crumble topping, mix your oats with a couple other dry ingredients in a bowl, sprinkle on top of your mixture, bake, wait, and serve!
And for the best results, always make sure your ingredients are room temperature, unless otherwise stated in the recipe.
Simple Ingredients
Blueberries. Of course, you can't have a blueberry crisp without blueberries! You can use fresh or frozen blueberries; if using frozen, make sure to thaw them first in a kitchen strainer and drain them, so the filling is not too liquidy.
Lemon. Freshly squeezed lemon juice as well as lemon zest provide so much fresh flavor. This is the best zester! (Affiliate link).
Rolled Oats. Oats are what sets a crisp apart from a crumble and a great way to add some extra fiber and nutrients to this dessert. Make sure you use certified gluten-free oats if anyone has a severe gluten allergy; otherwise, oats are naturally gluten free.
Oat Flour. For even more enhanced crumble texture, the recipe uses oat flour. You can easily sub this with almond flour or another gluten-free flour blend of your choice. However, I would not recommend coconut flour. Note if you use All Purpose Flour, this recipe will no longer be gluten free.
Melted Coconut Oil. The crisp topping mixture requires a fat to get perfectly crispy and golden brown. I love using coconut oil for the subtle coconut flavor and keeping the recipe vegan. You can also sub with regular or vegan butter.
Maple Syrup. For a natural sweetener, this recipe calls for maple syrup. You can always sub with coconut sugar.
For serving, I love the cold/warm contrast of serving this crisp with a scoop of vanilla ice cream, even a big dollop of cold Greek yogurt.

Ingredients
Blueberry Filling
- 5 - 6 Cups Blueberries
- 1 Lemon Zest
- 1 teaspoon Cinnamon
- 1 teaspoon Maple Syrup Optional
Crumble Topping
- 1 Cup Rolled Oats
- ½ Cup Oat Flour Simply grind oats in your blender or food processor to make a flour-like consistency
- ⅓ Cup Coconut Oil Melted
- ¼ Cup Maple Syrup Can sub honey
- 2 tablespoon Cinnamon
- 1 Generous Pinch Salt
Instructions
- Preheat oven to 350. Pour blueberries, lemon zest, cinnamon and maple syrup (if using) into an 8x8" square baking dish, or round pie dish, and toss to coat blueberries.
- In a bowl, mix all the ingredients together for the crumble. Feel free to taste and adjust the cinnamon or maple syrup to your preferences. Use your hands to sprinkle the mixture over top the blueberries.
- Bake for 40 - 50 minutes. Let cool for at least 7 - 10 minutes, then serve immediately!
