    Healthy Blueberry Crumble {Gluten Free}

    This Healthy Blueberry Crumble is a delicious, juicy, and nutritious dessert that is so simple to make!
    Use some fresh blueberries and a few pantry staples to create an incredible recipe that is gluten free, vegan, and refined sugar free.

    Ha, ha, haaaaa....

    Q: Really, what's in this healthy blueberry crumble?!

    A: Oat's got very few, minimal ingredients and is naturally gluten free.

    Waaaa- wahhh. 

    Q: Can you stop now? These are getting berry bad.

    FINE.

    This healthy blueberry crumble is the perfect summer dessert. It's refreshing, crispy, juicy, and just the perfect amount of sweetness.  The recipe can also very easily be adapted for a strawberry  or raspberry crumble. But blueberries really are the best option.

    Plus, DID YOU KNOW that Blueberries have a plethora of health benefits from bone health to skin health to cancer prevention to blood health, and the list goes on and on...

    Did I mention yet how easy it is to make this healthy blueberry crumble?!

    Simply pour your blueberries into a baking dish, and mix around with some vanilla and some lemon zest.

    In the meantime, mix your oats and a couple other ingredients in a bowl, sprinkle on top of your mixture, bake, wait, and serve! 

    I love the cold/warm contrast of serving this crumble with some Vanilla ice cream, or even a big dollop of cold Greek yogurt.

    Healthy Blueberry Crumble {Gluten Free}
    This healthy blueberry crumble is naturally gluten and refined-sugar free, making it the perfect option for a healthy summer dessert!

    Cook Time 40 minutes

    Ingredients
    Blueberry Filling
    • 5 - 6 Cups Blueberries
    • 1 Lemon Zest
    • 1 tsp Cinnamon
    • 1 tsp Maple Syrup Optional
    Crumble Topping
    • 1 Cup Rolled Oats
    • ½ Cup Oat Flour Simply grind oats in your blender or food processor to make a flour-like consistency
    • ⅓ Cup Coconut Oil Melted
    • ¼ Cup Maple Syrup Can sub honey
    • 2 Tbsp Cinnamon
    • 1 Generous Pinch Salt
    Prep Time 5 minutes
    Cook Time 40 minutes

    Ingredients
    Blueberry Filling

    Instructions
    1. Preheat oven to 350. Pour blueberries, lemon zest, cinnamon and maple syrup (if using) into an 8x8" square baking dish, or round pie dish, and toss to coat blueberries.
    2. In a bowl, mix all the ingredients together for the crumble. Feel free to taste and adjust the cinnamon or maple syrup to your preferences. Use your hands to sprinkle the mixture over top the blueberries.
    3. Bake for 40 - 50 minutes. Let cool for at least 7 - 10 minutes, then serve immediately!
    Recipe Notes

    Make it ahead! You can make this ahead of time, and reheat later. To reheat: set oven to 300 degrees, and bake for 15-20 minutes covered in tinfoil (so the top doesn't burn!)
